The municipality of San Francisco Lachigolo is located within the Central Valley region. In this site you will find the facilities of organic coffee "Memorial", which is an organization of small producers developed from the premise of sustainability, achieving the certification of organic coffee. The organization is nationally recognised as an organization of responsible coffee growers. The route includes a visit to San Pablo Villa de Mitla, whose textiles and archaeological ruins not only reflect their cultural attraction but also its historic appeal; the production of typical clothing based on the pre-Hispanic manuscripts weave millennial knowledge about nature and its serves. Mitla, which means "place of the dead" in nahuatl, reflects the unique way in which local communities understand the benefits provided by the interaction between ecological and social dynamics.

Teposcolula is an impressive community in terms of architectural, cultural and ancestral Mixtec traditions. The community has one of the most interesting ex-convents of the Valley of Oaxaca, which is considered one of its most impressive architectural creations of the 16th century. Teposcolula is also highly recognized for its gastronomic culture, which in combination with their productive projects illustrate the importance of the natural basis for community-based sustainable development, and the importance of the provision of environmental services for social and cultural development.
The field trip seeks to relate the intricate cultural characteristics and landscape of the region with the local provision of ecosystem services. Some of the problems are focused on the struggles of local producers of textiles and two local communities that manage one of the great natural attractions of Oaxaca, Hierve el Agua.
